Stir Fried Chicken with Mushroom and Soybean Stick

Another quick stir fry for a lazy night....
Did a quick check in the kitchen to see what I had handy.
Opened the fridge: cooked chicken breast in the pantry: dried shiitake mushroom and soybean sticks
hmmm......got it!
Decided to do a stir fry with famous-never fail oyster sauce and tons of garlic.
We were also fighting a cold so I made sure the garlic was not cooked all the way ( natural antibiotic)
The semi cooked garlic along with the oyster sauce gave the mushrooms a slightly buttery chewy texture which I like. The result was perfect, a savory side dish good with salad, rice or congee.

Ingredients:
  • chicken - cooked + shredded
  • dried shiitake mushroom - soak in warm water until soft- thinly sliced
  • dried bean curd stick- soak in warm water until soft - cut into half inch size
  • oil
  • oyster sauce
  • head of garlic - minced
  • white pepper
  • cilantro
Heat pan with oil, add half of the minced garlic, mushroom, cook for a minute then
add bean curd sticks and chicken, give it quick stir and toss
add the rest of the garlic and oyster sauce, give it quick stir and toss again make sure it all mixed well.
Done!
Great with fresh cilantro!

Simple Stir Fry Minced Pork with Garlic & GInger

Here is a simple quick stir fry.
There are so many different options to serve this.
With noodles-rice-wrapped in lettuce- mix with any type of vegetables- 
topping on steamed tofu ..etc
Ingredients:
Minced Pork
Ginger
Garlic
oil

Marinade:
salt + white pepper
soy sauce
sesame oil
rice wine
Worcestershire sauce
brown sugar

1. Put together the marinade in a bowl, mix well and taste to your liking. Add to the minced pork and work it into the meat with your hands or a fork. Let it sit for 15 minutes.
2. In a heated wok add oil, ginger. When the ginger begins to brown add the garlic - stir - and add the pork, break and gently toss the meat with your spatula until all cooked.
Topped with fresh cilantro and ginger

Enjoyed it with a piping hot bowl of congee.

Quick Stir Fry - Beef Cubes Eggplant & Chinese Greens

Who doesn't like a nice quickie meal especially when you're tired from work.
Here is a dish with easy prepping and all you need is a pan or a wok.
For a good stir fry try to use a wok, that way it maintains the heat with the ingredients.

Ingredient: A
beef - cut into cubes
eggplant - slice into 2"
chinese greens - slice in half
oil

Sauce: B
Lee Kum Kee-Black Bean Sauce
sugar
ginger
fish sauce

Marinade for Beef Cubes: C
soy sauce
rice wine
sesame oil


1. Marinate beef cubes with "C "for 10 mins.
2. In a bowl mix together "B". You can add water or broth to thin the paste (black beans are fermented and are very strong in flavor , so be careful with amount you can always add more when tasting)
3. Heat wok with oil, oil must be hot , add the beef cubes - work them around the wok to give it a quick browning. Remove and put aside.
4. Add the vegetables and cook until done then add "B" on the inner side of the wok ( i like the sauce to thin out so it can distribute evenly)
5. Add the beef cubes back to the wok and give it another quick stir with the rest of the ingredients. Done!

Here is a savory dish with tender beef cubes, crunchy greens and eggplant that just melts in your mouth mmmm
This was very good with a bowl of rice and chili garlic sauce.

ground turkey stir fry


We always have ground turkey in the fridge. We use it for turkey bolognese and this stir fry which we have every week. It is inexpensive and super quick & easy to make! We love it with rice and siracha. You can use whatever veggies you like. I like using long beans but have used kale, broccolini or cabbage. I also add carrots when I have them in the fridge.
  • 1 lb ground turkey dark meat
  • 1 bundle of long beans ( cut into 2 inch pieces and blanched)
  • onion
  • garlic
  • 1 square preserved bean paste (fu yu) mix with water to thin
  • 1 tablespoon black bean paste (lee kum kee is my friend)
  • 1 teaspoon hoisin
  • salt and soy sauce to taste
Brown turkey, unless you have an industrial strength stove like Annie, this takes a while. I drop the turkey in the wok in large pieces over high heat to get the sear. After I get some color then I break the meat up to smaller bits by pushing a wooden spatula through it. The meat usually gets a bit watery at this point. Just keep stirring until the water condenses and you hear the sizzling come back. At this point add a little more oil. I use olive oil. Add the onion and garlic and let it cook for a few mins. Then add the veggies. Once the wok is sizzling again, turn the flame down a little. Add the sauces and stir fry until veggies are at the tenderness you like! I put all the seasonings at the end because the turkey gets too salty if you season along the way.
Molly likes just the turkey and rice. I tried sneaking in the long beans cut into tiny pieces. She found them! "No"
