I wanted to make something yummy this morning for Adam. Also to show off my creative abilities with leftovers. My sisters can also attest to the fact that I do not let anything go to waste. It kills me to throw food away! So I conjured up the following:
An over easy egg over a toasted english muffin topped with king crab corn salad drizzled with truffle oil!
King Crab Corn Salad
2 very big king crab legs -or whatever you didn't finish from the night before :)
4 cups of corn
1/4 cup of toasted chopped walnuts
1/4 cup feta cheese
1 whole jalepeno pepper minced
extra virgin olive oil
Salt and pepper
Combine all the above.
Over easy eggs:
2 large organic eggs- make sure the pan is hot enough to get it perfect
English muffin:
1 whole grain muffin -toast it well so it can hold up all the goodies
Drizzle some truffle oil on top. Voila!
Don't forget the champagne!

That looks amazing! I have a Lurpak butter(Danish) Ad from a European magazine up in my store that has the tagline "Leftovers- we call them ingredients". I had to laminate it and use it- what other rule do cooking people always live by- no matter where they are on the planet. Nice to meet 4 happy sisters! I have 2 happy sisters (visiting 1 now) but we all live very far apart :(

I'm still waiting to taste this king crab salad. Maybe we'll have it before Orlando since who knows what shellfish will be available to us. Certainly nothing local...wah wah.

Congratulations on making it to the 30 best recipes of 2010. I need to find some king crab legs soon to make this, I lack words when it comes to admiring about crab. I can literally have it everyday and this salad is just perfect.
